Vegan Tofu Spinach Salad

This is my go-to recipe if I'm tired when I get home and want to keep a quick meal healthy. With only  3 ingredients it's a great money-saver too! At around 300 calories per serving this meal is great for those watching their weight or if you want a hit of protein without the carbs.

Ingredients:

Large bowl of baby spinach (as much as you think you can eat!)
125g black and white quinoa/ other mixed grains of your choice

120g tofu cut into small strips
Drizzle of teriyaki sauce

Method:

Wash the spinach and spin to dry. Keep in the large bowl and add the quinoa on top. Now carefully mix the quinoa in with the spinach, I say carefully because it can tend to ping off the edges of the spinach out of the bowl. Once you have an even distribution you can add the sauce of your choice to taste, my personal preference is teriyaki which I recommend you try because it's delicious but if you don't like it feel free to experiment!
Now place the pieces of tofu over the top of the salad and you're done :) I know this looks very simple but don't worry, the taste makes up for it

An extra addition taste-wise would be to add sweetcorn or slices of tomato. If you're feeling super adventurous you could even go for both!
