Sugarfree vegan banana/blueberry cookies

At approximately 100 cals each these sugar-free wholemeal cookies are perfect for packing with you to see you over until lunchtime or for a pre/post exercise snack. Consisting of only 4 ingredients, even I can manage to bake them without too much difficulty, although I certainly wasn't concerned about presentation!


Ingredients (makes 10 cookies):

4 small bananas
1 1/2 cups blueberries

2 cups of porridge oats
1/2 cup self raising flour
3 tsp cinnamon powder





Method:
Preheat your oven to 180 degrees.
Start by mashing the bananas in a large bowl until relatively smooth, although it doesn't matter if a few lumps remain. Next, add the oats and stir until you have an even distribution. Now add the blueberries and cinnamon, but stir carefully because we don't want the blueberries to be mashed before they get in the oven as they burst nicely within the cookies once they are heated.
Grease a large baking tray (you may need two like me) with vegetable margarine and scoop the mixture out into 10 servings, trying to make them smooth and flat into a cookie shape. Don'y worry if they aren't perfect, you're going to eat them not display them!
Bake for 15 minutes then routinely check them every couple of minutes if they are not done, until golden brown in colour and not soft to touch. You're work is done :)


Let them cool and hope you enjoy :) Serve with strawberries and yoghurt for an extra treat!
