Easy Vegan Tofu Recipe

Burgers (serves 2)

Ingredients:

Half 1 large red onion
200g block of tofu (as solid as possible)
30 g plain white flour
1 clove crushed garlic
1 tsp paprika
Spray oil (this is to keep it low calorie so, optional)

Add any combinations you fancy, I went for vegetables and hummus!

Method:

Finely chop half of a large red onion and begin to gently fry in a pan, sprayed with sunflower/olive oil. Add the clove of crushed garlic to the same pan and continue to gently fry these.
With your hands, crumble the 200g tofu in a bowl and add the flour and paprika. Stir well, forming a thick paste.

When the onion has gone soft, remove from the hob and add to the mixture of tofu, stirring it in well. Now split the mixture in half, saving one lot for tomorrow in a bowl covered with cling film. Separate the remaining load into two to form two patties of the mixture (roughly burger shaped).
Spray the same pan you used for the onion and garlic with some more oil and use this to gently fry the tofu burgers until piping hot, and with a crisp coating.

Teriyaki slices: (serves 1)

Ingredients:

100g block solid tofu
Teriyaki sauce
Spray oil (sunflower/olive)

Method:

Slice the block of tofu into three even slices and begin to fry these gently in a pan sprayed with oil. Press these into the pan so that they sizzle, then when they have a crispy coating, add teriyaki sauce to the pan (as much as you think you'd like) to the pan and stir the pieces into it.
Voila! Could it get any simpler?

YUM YUM
