Sugarfree Vegan Sweet Potato Muffins

This is a recipe I came up with yesterday so I'm still enjoying my batch (just). The feedback from family members was that they are very tasty but a little chewy. I've shortened the baking time and added little extra soya milk to improve this. YUMMY THOUGH!
If you want to go for truly sugar free you can just cut the date syrup from the ingredients, I just knew my sweet toothed mum would complain if there wasn't a teeny bit in there :)

This batch was wholemeal
Ingredients (serves 12) - 100kcal each


300g sweet potato, finely chopped
200g wholemeal/white plain flour
Drizzle of date syrup (optional)
1 mashed banana
1 heaped tsp baking soda
1/2 serving spoon ground ginger
1 serving spoon cinnamon powder
1/2 cup soya milk (approx. 125ml)





Method


  • Preheat your fan oven to 180 degrees Celsius
  • Boil your finely chopped sweet potato for around 8 minutes then drain this and leave to stand
  • Mash your banana and stir in the syrup, ground ginger and cinnamon powder. Then add the flour and baking soda. 
  • Stir until fully mixed
  • Now mash your sweet potato until smooth and stir this into your banana mixture
  • Add the soya milk (or other dairy alternative)
  • Spoon into your muffin cases and pop in the oven

Looks like a turd hehe but yummm

These take 20-25 minutes in the oven, depending on consistency!
